We’ve created a new delicious and easy recipe in our house that is toddler-friendly to boot. It requires very little ingredients, minimal prep time and it’s always scarfed down by the whole family.
All you need is
- Chicken breasts or strips (I prefer the strips so I don’t have to handle the meat as much and they tend to be cheaper as well)
- coconut flour
- coconut shreds
- salt and pepper
Get our three shallow bowls and beat the egg into one bowl, coconut flour with salt and pepper in another bowl and coconut shreds in the last bowl.
Dip the strips into the coconut flour first, then the egg and then the coconut shreds. Press the shreds into the chicken as best as you can then lay the strips on a baking sheet.
Once all the chicken is on the baking sheet bake them at 350 for about 25 minutes (flipping them over halfway). Then broil them for 4-5 minutes at the end to give them a delicious brown glow.
We usually cook about 2 lbs worth and have enough for the whole family for dinner plus some leftovers for lunch the next day. Play around with different dipping sauces. Our favorite is half honey, half spicy mustard! Enjoy!
