Thursdays are rough around here. The kids are in daycare Wednesday – Friday. Thursday is right in the middle of that craziness and it seems like we are always barely hanging in there; meals are hard and usually consist of something totally random like hard boiled eggs and bananas with peanut butter. Wha?
So I’m working on planning ahead and figured if I start this series and have a meal plan for every Thursday maybe it will help motivate me to actually cook.
My chiropractor recently told me that I was showing signs of toxins in my body and that I should eat lots of beets. I’ve never really eaten beets in my whole life aside from the occasional taste at a salad bar so I didn’t really know what to make. I bought the pre-steamed and peeled ones from trader joe’s and just through together a hot salad. It was super easy and really delicious!

Peeled and steamed beets
Roast the Beets in skillet with olive oil. Add spinach and kale and cover with lid to steam greens. Once greens are shriveled lower heat and add pasta sauce. Season to taste with S&P. Plate the mixture and crumble goat cheese on top.
